Vegetable Rice Casserole

Serves 2-4

Time 20 minutes

Ingredients

1 packet of cooked basmati rice

200g button mushrooms, diced

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 can cream of mushroom soup

1 cup frozen peas

1 zucchini, diced

1 cup vegetable stock

Shredded cheese, to serve

Salt and pepper

Method

Preheat the oven to 200°C.

In a large bowl combine the rice, mushrooms soup, stock, garlic powder, onion powder, paprika and mushrooms.

Season with salt and pepper and stir to combine. Stir through the zucchini and peas.

Place this in a casserole and ensure nice and flat, sprinkle with cheese.

Bake for 15 minutes then enjoy.
