Vietnamese Style Pork Chops

Serves 4

Time 30 minutes

Ingredients

1kg pork chops

Pinch of salt

Pepper

Marinade

1 tsp fish sauce

1 tbsp light soy sauce

1 tbsp oyster sauce

2 tbsp coconut sugar 

2 tsp white pepper

1 tbsp brown sugar

1 tsp five-spice powder

1 knob ginger, peeled and cut into matchsticks 

6 cloves garlic, roughly chopped

2 red shallots, chopped 

1 bunch of coriander, finely chopped 

1 bunch spring onion, whites finely chopped

1 stalk lemongrass, finely chopped

¼ cup extra virgin olive oil

To serve

¼ lettuce

1 cucumber, sliced

½ avocado 

Spring onion, finely chopped

Green chilli, diced 

Fried onion

Chervil 

Extra virgin olive oil 

Lime juice

Method

Preheat the oven to 200°C. 

Season the pork chops with salt and pepper. 

Mix the ingredients for the marinade and pour over the pork chops mix so that pork is covered in the marinade. 

Bake for 20-25 minutes or until the pork is cooked through. 

Squeeze fresh lime juice over the pork, serve with veggies, drizzled with olive oil.
