Serves 4

Time 10 minutes

Ingredients

200g udon noodles  

¼ tbsp extra virgin olive oil

6 cloves garlic 

1 onion, sliced

2 tbsp ginger, sliced

1 long red chilli, sliced

100g shiitake mushrooms, sliced 

200g prawns

½ cup peas

1 bunch spring onion, chopped 

1 bunch coriander, chopped

1 bunch garlic chives, chopped

2 eggs, whisked

Salt and pepper

1 tbsp toasted sesame seeds

2 tbsp deep fried onions

For the Sauce

¼ cup oyster sauce

¼ cup sriracha sauce 

¼ cup dark soy sauce 

¼ cup light soy sauce

1 tsp brown sugar

Method

Boil the noodles according to the package instructions. Drain and rinse with cold water, then drizzle some oil and set aside.

In a bowl, combine all sauce ingredients.

Heat oil in a pan and sauté the garlic, onion, chilli and ginger. Add the mushrooms and sauté with a splash of oil, then add the prawns.

Add the egg on the side and stir through, then add the pea. 

Add noodles, herbs and sauce, stir and toss around until everything is hot and well combined.

Top with sesame seed and fried onion, serve and enjoy.
