Zucchini Fries

Serves 1

Time 25 minutes

Ingredients

2 zucchinis, cut into sticks

2 cups panko breadcrumbs

1 cup purpose flour

1 egg, beaten

Seasoning

1 tsp dried oregano

1 tsp dried basil 

1 tsp dried thyme

½ tsp ground turmeric 

½ tsp garlic powder

Salt and pepper

Method

Preheat oven to 200°C.

Place a cooling rack over a tray lined with baking paper.

In a bowl combine the seasoning with the breadcrumbs.

To prepare place the zucchini sticks into the flour then dip into the egg then coat in the panko mixture – do this for all the sticks, ensure well coated in bread crumbs.

Place these on the cooling rack OVER the tray! Essential for crispiness!

Spray with olive oil.

Bake for 15-20 minutes until golden.

Serve with aioli.
